On the family's blog, Rory remembered the past days as "a week to remember," as he and his wife celebrated Valentine's Day together, followed by their daughter Indiana's 2nd birthday.
"There have been big parties for little people and small losses with great lessons…and we even had a romantic night filled with more love for each other than we even thought was possible," Rory wrote. "But mostly, this has been a week filled with thankfulness."

Detailing how the couple watched the pre-Grammy celebration together, and his and Indiana's trip to pick up sushi – Joey's favorite food – to surprise his wife on Valentine's Day, Rory documented every moment in pictures.
"Thought she'd hardly eaten anything at all for the last couple of weeks … starting that night, her appetite came back and she had the greatest time," he wrote. "Her three sisters helped her with make-up and she put on a nice shirt and scarf to look pretty for me."
Following their romantic, sushi-filled date, Joey, who is bravely facing her final days after battling with terminal cancer, gave Rory a surprise of his own.
"As I said goodnight and tucked the blankets around her in the little hospital bed she has been living in for months she thanked me for the special night and then made one last request," he added. "'If Jody helps me to scoot over to one side … could you try to lay down with me and put your arms around me?'
"I haven't been able to be in the same bed with my wife or hold her in my arms since the beginning of November – when she made her last trip to the hospital. But for one sweet half-an-hour … that changed on Valentine's Day."
After an amazing holiday, the couple celebrated their daughter's second birthday with a small party at their home, setting up balloons and cake near Joey's bed so she could join in the festivities.
