ANGUS BURGER

• 1 tbsp. vegetable oil
• 1 ½ lbs. ground beef, formed into 4 patties
• Salt and pepper to taste
• Worcestershire sauce (if desired)
• 4 slices cheddar cheese
• 4 hamburger buns

1. Heat oil in a large, heavy skillet (cast iron skillet suggested) over medium high heat. When pan is hot, add burgers seasoned with salt, pepper and Worcestershire sauce. Cook 7 minutes, flip and continue cooking for 7-8 more minutes or until done.

2. Place a slice of cheese on each burger while still in the skillet. Cook for an additional minute for cheese to melt. Serve on a bun with your favorite condiments.

PARMESAN FRIES

• 4 large potatoes
• ½ tbsp. ground thyme
• ½ tsp. black pepper
• 1 tbsp. olive oil
• ½ tsp. salt
• ¼ cup grated Parmesan cheese

1. Preheat the oven to 450 degrees. Cut potatoes into strips and pat dry with a paper towel. Place in bowl and toss with thyme and pepper; drizzle with oil.

2. Place on a baking sheet and bake for 30 minutes.

3. Sprinkle cheese and salt evenly. Bake for another 10 minutes to brown.

USE A DRY RUB: "I can't give out the recipe to my dry rub; it's a secret. But it's got a paprika base and a little brown sugar. Then before it hits the grill, I rub it down with a good olive oil."
