STRAITS GARLIC NOODLES
• 2 lbs. egg noodles
• 2½ tbsp. butter
• 4 tbsp. garlic
• 4 tomatoes cut in quarters
• 2 stems of basil (Thai or regular)
• ½ pound shittake mushrooms, sliced
• ¼ cup oyster or soy sauce
• 3 tbsp. sugar
• 2½ tbsp. black pepper
• 1 cup bean sprouts (optional)
1. Boil egg noodles in hot water for 10 min., until tender. Strain and set aside.
2. Heat up a wok or medium-size skillet or pan. When it's warm (about 2 to 3 min.), add butter, followed by garlic, tomatoes, basil, mushrooms and strained noodles. Sauté for 3 min., stirring regularly.
3. Add oyster sauce or soy sauce to pan and toss with noodles until fully blended. Sprinkle black pepper and sugar, tossing well.
4. If desired (this is an option at the restaurant), add protein such as chicken or shrimp, or a vegetable. Plate and serve.
