Burros, an ex-Washington Post food editor, is bonkers on nutrition and out to eliminate every additive and every ounce of sugar from every diet. She's also wonderfully practical about it. This book is subtitled "30-Minute Meals from Scratch," and while she fudges on the timing, she performs a profound service. "For the harried," writes Burros, "it is not necessary to succumb to the blandishments of the food industry by purchasing additive-filled, highly processed 'convenience foods' in order to save time." For experienced cooks, her quick meals require rethinking. "Neatness doesn't count," writes Burros, adding, "You will also have to stop worrying about exact measurements." Burros' 61 menus range from simple (bratwurst) to exotic (shrimp with apple and brandy). Haste does not make waste here—only good, cheap meals. (Morrow, $11.95)
