There may be a lot of things to be said for living in Dubuque, but the availability of fresh seafood isn't one of them. Even noncoastal cooks, though, might want to find a freshwater substitute for the bluefish in this book's easy and savory broiled fillet recipe. It calls for a marinade of garlic, lime, Worcestershire sauce, parsley, mustard and fennel seeds. The Foleys, New York literary agents with a Maryland second home, also provide enough poultry recipes to satisfy landlubbers. Their honey-butter-dipped chicken is another uncomplicated delight.
