In less than one hour you can produce a ham gateau with mustard sauce, french fried yams and glazed baked apples, insists Dannenbaum, a Philadelphia-based cookbook author and teacher. Her menus stress simplicity and planning, though at times simplicity nose-dives into simpleminded-ness. Even the most hassled chef hardly needs a recipe for sliced oranges. In addition to that condescension and her cutesy menu titles—Valentine's Day Orgy for Two—Dannenbaum neglects to specify when certain vegetables are in season. It could be disastrous to set up a menu only to discover at the last minute that you can't find fresh artichokes in November. Still, such recipes as rack of lamb with orange rosemary butter are nicely presented, and the wine suggestions are helpful. (Harper & Row, $13.95)
