What can you say to recipes that are healthful, delicious and easy to prepare other than eureka! A brother-sister team who have collaborated on two previous cookbooks, the authors provide an enticing series of main-course vegetable dishes using potatoes and celery more often than roquette (a type of arugula) or Chinese okra. Try the chilled broccoli and brown rice salad with almonds, onions, olive oil and tarragon. In fact, make up a vat of it, lay in some easygoing red wine and French bread, and you've got a week's worth of summer meals. More books like this and we'll be celebrating the age of the herbivore.
