by Sylvia Balser Hirsch

Chocoholics can smother themselves in these 150 "black magic" desserts from Hirsch, better known as Miss Grimble. the mother of New York's venerated cheesecake. The author's tips are succinct (always use salted butter, dust a pan with cocoa instead of flour to enhance a cake's flavor), and she gets right to the recipes: cakes, frostings, tortes, pies, cookies, fudges, souffl├ęs, ice creams, sauces. Now all you need is a slather of blemish cream and a new diet book. (Macmillan, $14.95)
