It is possible to make delicious muffins for breakfast almost while the coffee is perking—in less than 30 minutes. How about three-flour muffins that have whole wheat flour, cornmeal, all-purpose flour, molasses and no butter or shortening. Can you imagine anything healthier? They take only 15 minutes and taste great. The orange-raisin muffin is good enough to be served as cake after dinner. Not all the breads in this book can be whipped up in a few minutes. In one section that includes fancy breads—some take 90 minutes to make—is bourbon rolls with Kentucky ambrosia. Cutler, author of six other cookbooks, has produced something for bread makers ready to branch out. (Rawson Associates, $15.95)
