WHAT DO MEN REALLY WANT, DR. FREUD? Give 'em Elle. Macpherson, that is. Of course there's the wild, Outback hair, the Down Under brown eyes and the smile that turns men into fawning koala bears. And just listen to Eric Schaeffer, her costar in this fall's If Lucy Fell, get all anatomical: "It's the part between her belly button and—it sounds gross—the pubic bone. That little concave, lower-belly part. That's a fairly stunning part of her." Yet the 6', 125-lb. supermodel is more than the sum of her size-6 parts. Your Personal Best Workout with Elle Macpherson is a top-selling fitness video; she just opened a Manhattan restaurant, Fashion Cafe, with Claudia Schiffer and Naomi Campbell; and she will appear as Blanche with William Hurt in a new film version Jane Eyre this summer.

What fuels all that energy? Carbs. "I eat two meals a day, a lot of potatoes and rice," says Elle, 31. At home in New York City with live-in love Tim Jeffries, an art dealer, Elle prefers being as natural as possible. "I come from a country where you don't wear clothes most of the year," she says. "Nudity is the most natural state. I was born nude, and I hope to be buried nude."
