Once you've made the lobster club, oozing with thick lemon mayonnaise on buttery brioche, you'll see that Great Sandwiches is positively addictive. Food columnist Costner presents a quirky mix of recipes from hearty to hautey, with clever twists on the classics. Rather than canned tuna on rye, why not fresh tuna on focaccia with arugula and capers? Most of the recipes work. Her egg salad is runny, but the mayonnaise whips up well and the breads rise on schedule. The design is lively, and Faith Echtermeyer's photos seem to pop off the page. Bravo! (Crown, 24.95)
