Welcome to the cult of Emeril Lagasse, the Food Network's biggest star. Nonbelievers will find these mainly Louisiana recipes from his TV show long on Lagasse's macho lingo and short on practical details. But once we got the proportions right, we loved his Roasted Eggplant and Garlic Soup. (Morrow, $25)
