The celebrity chef hosted Starwood Preferred Guest's Members Culinary Experience with Todd English last Thursday at the recently-renovated hot spot, presenting hors d’oeuvres, passed canapés and cocktails to patrons, plus five courses of food and wine pairings.
English shared the recipe for the Union Square Highrise with PEOPLE – now readers can make their own version of the gin and champagne concoction at home.

Union Square Highrise
(Makes 1 cocktail) 1.5 oz Bombay Sapphire East
3 oz. rosé champagne
.5 oz. simple syrup
.5 oz. lime juice
3 leaves of fresh basil
5 blueberries
Combine two of the basil leaves, berries, lime juice and simple syrup in a mixing glass and muddle. Add gin, top with ice and shake vigorously. Pour contents into a highball or Collins glass and top with rosé champagne. Garnish with a pressed basil leaf.
