Try Paula Deen's 'Mighty Good' Zucchini Fries

Still trying to keep that New Year's resolution about eating healthier? Take a page from Paula Deen's revamped diet and turn veggies into a special treat.

Instead of indulging in French fries, the Southern chef developed a recipe for zucchini fries that's just 60 calories a serving – and diabetes-friendly. "Fresh veggies are a Southern staple and these are mighty good!," raves Deen, who revealed she suffers from Type 2 diabetes a year ago.

So your taste buds and your waistline will be happy.

Crunchy Zucchini Fries In A New Light

Makes six servings – adapted from diabetesinanewlight.com

Ingredients
Vegetable cooking spray
1 egg white
1 Tbsp. light mayonnaise
3 (8-inch) zucchini, cut into 4½-inch lengths, about 42 pieces
¼ cup plain dry whole wheat bread crumbs
2 Tbsp. cornmeal
1 Tbsp. white whole wheat flour
1 tsp. chili powder
¼ tsp. salt



Instructions
1. Preheat oven to 425. Spray a large baking sheet with cooking spray.
2. Whisk together egg white and mayonnaise in a large bowl until blended. Add zucchini and toss until well coated. Place bread crumbs, cornmeal, flour, chili powder and salt in a large zip-top bag. Add zucchini, a few pieces at a time, shaking the bag to coat well.
3. Place zucchini in one layer on baking sheet. Lightly spray with cooking spray. Bake 15 minutes or until lightly golden and crisp.
Serve immediately.
