Antigua was the perfect destination to continue my relationships with the three remaining guys on The Bachelorette. Each one has such incredible qualities but Brooks stood out.

So let's start with what I'm sure you are all wondering about ... My relationship with Brooks was always secure and confident when we were together, but I never knew what was going through his mind when we were apart. That should have been a red flag, but sometimes love is blind.

Theories abound about what happened between Desiree Hartsock and her remaining trio of suitors during The Bachelorette finale, which is so dramatic that it had to be broken into two parts.

While she wouldn't even give us a hint about the tear-inducing twist when PEOPLE sat down with her exclusively at the Men Tell All taping, the L.A. resident and bridal stylist did dish on plenty of other topics.

Who Should Be the Next Star of The Bachelor?

The season finale of The Bachelorette is right around the corner! While fans are certainly eager to see if Desiree Hartsock gets engaged – and to whom – there's another important question on their minds: Who will be the next star of The Bachelor?

It seems that two frontrunners have emerged from Des's pack of castoffs: ab-tastic Zak Waddell and sexy Venezuelan soccer player Juan Pablo Galavis.

Desiree said in her Bachelorette blog this week that it should be Zak. "He is so deserving of love," she admitted. "I would love to see him have the opportunity to choose from 25 suitable women to find it."

It's not everyday you have all your ex-boyfriends in one room ready to put you on the spot, but that is exactly what I had to deal with on Men Tell All.

I was anxious, nervous and also excited to see all the men I had sent home. It was an emotional journey and I have nothing but fond memories – of most of them.

After wading through the filler of pre-taped packages on crashed Bachelor Nation viewing parties and former Bachelorettes giving Desiree Hartsock advice on how to handle the reunion through roleplaying, viewers were finally treated to the meat of the Men Tell All special. But per usual the end-of-season confront-fest for ABC’s behemoth dating competition can only pack so much drama from a six-hour taping into a two-hour time slot.

Here’s what you didn’t get to see on television:

After a beautiful week in Madeira, I was excited to meet the families of the four guys left on The Bachelorette. This week would be pivotal in helping me discern my feelings for each guy. It felt so refreshing to be back in the States, and I couldn't wait to see what the men had in store.

Zak always has a surprise for me – I love that about him – so I had no idea what to expect for our date. I knew that his family business was in sno-cones but I did not expect to make them for a classroom of kindergarteners. It was so much fun trying all the unique flavors and it brought me back to my childhood. Zak was amazing with all the children and that showed the kind of father he would be – funny yet caring.

After such an emotional and dramatic week in Spain, I was looking forward to a new, refreshing week in Madeira, Portugal, an island I knew little about. And what a wonderful place to start fresh! The scenery was out of this world and it truly lifted my spirits. It has it all – the ocean, the mountains, lushness, cobblestone streets and, of course, five guys that I was crazy about.

I really tried to keep each relationship separate throughout this journey on The Bachelorette, but starting this week, I compared the relationships so I could find out whose family I needed to meet.

I've always wanted to see Spain and now that I've been there on The Bachelorette, it's one of my favorite places on earth! The city of Barcelona, the people, art and culture are so inspiring. What a wonderful place to start fresh after such an awkward week in Germany. That is, until I was placed in a compromising position and had to deal with more emotions and drama from the men.

I wanted to explore the city and continue my connection with Drew. In a group setting, he tends to be more reserved and I wanted to see his fun, playful side on our date. Although that side didn't shine through, a different and powerful one did.
