Jenny McCarthy's weight ballooned to more than 200 pounds after the birth of her son Evan, now 6 – but the actress got back on track through smaller meals, a diet overhaul and a yoga regimen that left her boyfriend Jim Carrey feeling jealous.

"[Weight Watchers] taught me portion control and to be conscious of what I put into my mouth," the outspoken McCarthy, 36, tells Shape magazine for its May issue.

Three years ago, McCarthy switched to a gluten- and dairy-free diet, and now a typical day's menu includes egg whites, fish, fresh fruit and veggies. Between meals, she noshes on "those little packets of nuts from Starbucks."

Jim Carrey credits girlfriend Jenny McCarthy's son, Evan, for teaching him how to love.

As he led 8,500 people through the streets of Washington, D.C., Wednesday, hand-in-hand with his daughter, Jane, McCarthy and Evan, the actor told PEOPLE, "He taught me how to love. And without Evan I might never have seen the greatness of Jenny's spirit."

Carrey added to the families, lawmakers and other activists gathered to raise awareness about toxins in vaccines that McCarthy is "the source of all that is good" in his life.

That, he explained to PEOPLE, is how he ended up on the frontline of a political movement. "Jenny's friends would kind of hint around and say, 'Hey, it would be kind of cool if you got involved in this,' and I thought to myself, 'This is just so inevitable. This just can't not happen.' If you care about the planet and about children, you have to."

Oprah Winfrey's self-help Web chats with author Eckhart Tolle are now drawing some celeb guests: Jenny McCarthy showed up this week to talk about her relationship with 5-year-old son Evan.

McCarthy, who spoke to PEOPLE last year about her struggles with her son's autism, discussed Tolle's book, A New Earth: Awakening to Your Life's Purpose, which Oprah picked as her latest Book Club selection. (Winfrey liked it so much she launched a 10-week Web "class" around it.)

"I read this book when it first came out and this was one of my big wake-up calls," says McCarthy, who spoke about the need to simply "be" with him – and whether that was enough to be a good mom. (See the rest in the video above.)

Jim Carrey on Jenny's Son: He Thinks I'm Cool

Jim Carrey has been scoring points with Jenny McCarthy's 5-year-old son, Evan – with his role as the voice of the lead character in Dr. Seuss's Horton Hears a Who.

"I think he thinks I'm pretty cool anyway," Carrey, 46, told PEOPLE on the red carpet at the movie's Los Angeles premiere over the weekend. "It's pretty great. I've been reading [How the Grinch Stole Christmas] to him forever, and he wasn't aware that I was actually the Grinch" – Carrey's role in the 2002 movie.

But Evan has figured out Carrey's latest role, in Horton. "This one he clued into. We took a walk around today, and he said, 'You know, you're Horton. You're in the movie. You did the voice.' As if I needed to know that information," said Carrey, who also brought his daughter Jane, 20, to the premiere. "It was cool."
