Instead of indulging in French fries, the Southern chef developed a recipe for zucchini fries that's just 60 calories a serving – and diabetes-friendly. "Fresh veggies are a Southern staple and these are mighty good!," raves Deen, who revealed she suffers from Type 2 diabetes a year ago.

When Paula Deen finally stopped living in denial about having type 2 diabetes at the end of 2011, she cut down on carbs, cut back on portions-, doubled up on greens and dropped 40 lbs. Her family followed suit.

First, son Jamie, a dad of two, lost 45 lbs. by "eating like a 6-year-old," he says. "Six-year-olds eat the right portion sizes!" Next, Paula's 300-lb. husband, Michael Groover, faced a choice: schedule knee replacement surgery or lose weight. Because "I'm not fond of knives," he says, he shed 60 lbs. on a strict, doctor-supervised regimen.

Paula Deen's surprising new food revelations continue!

Her latest obsession? "I am hooked on smoothies," she tells PEOPLE. "I'd just as soon have that as a milkshake."

The queen of comfort cooking has changed the way she eats since coming to terms with her diabetes diagnosis and dropping 30 pounds.

One of her last challenges was learning the importance of having a healthy morning meal. "I was bad about missing breakfast," admits the Food Network star, 65. "I always felt like if I start the day eating, I'm going to finish off the day eating."

Now that Paula Deen has dropped from a size 18 to a size 10, the celebrity chef has an entirely new outlook on life.

"She's really trying to make a fresh start for herself and for her family," says PEOPLE Senior Editor Michelle Tan of this week's cover subject. "We discovered a whole new Paula Deen. She was really devoted to living a healthier lifestyle."

Deen, who admitted she had Type 2 Diabetes in January, was first "in complete denial" about her condition, Tan explains, adding that Deen "didn't think it was a big problem and she [thought she] didn't have anything to fix about her diet."

Paula Deen knew it was time for a change.

Nearly six months after announcing she was diagnosed with Type 2 diabetes, the Food Network star, 65, opened up her Savannah home – and fridge – to PEOPLE, and revealed how she devised a slim-down strategy that has worked for her.

"I do think differently now" about food, Deen says in this week's cover story. "I'm more aware."

So instead of regular meals with her favorite trigger foods (so long, mashed potatoes), the Southern chef has developed a new-found love for Greek salads and baked fish.

Paula Deen's Lawyers Hit Back at Harassment Lawsuit

Paula Deen is fighting back against a lawsuit filed on Monday by a former employee of a restaurant she co-owns with her brother.

Lisa Jackson – who worked for five years as the general manager of Uncle Bubba's Seafood and Oyster House in Savannah, Ga. – claims in legal papers that she was regularly subjected to sexual harassment by Deen's brother Earl W. "Bubba" Hiers and that Deen, 66, made racist comments.

In a statement released Tuesday, Deen's attorneys at law firm Oliver Maner refute the allegations made in Jackson's filing, saying in a statement, "We investigated those claims and attempted unsuccessfully to address those claims with her."

Paula Deen and her brother Earl W. "Bubba" Hiers are being sued by a former general manager at Uncle Bubba's Seafood and Oyster House, a restaurant they co-own.

Lisa Jackson – who worked as general manager at the Savannah, Ga., eatery for five years – alleges in court documents filed Monday in the Superior Court of Chatham County, that she was subjected to sexual harassment and violent behavior by Hiers.

The documents claim that Hiers's "conduct was even physically threatening and universally humiliating," adding, "The staff ... lived in fear of Bubba Hiers."
