Ruby Salad
4-5 heads baby red leaf lettuce, torn2 heads radicchio, cored and torn
3-4 heads of red endive, sliced lengthwise
½ cup dried cranberries
½ dried cherries
3 red beets, roasted, peeled and sliced lengthwise
½ cup pomegranate seeds
1 cup candied or toasted pecans
1 ½ cups crumbled blue cheese
Sea salt and freshly ground black pepper
Serve with Balsamic Vinaigrette or Pomegranate Vinaigrette
Put the salad greens in a bowl and toss to mix. Add all the remaining salad ingredients. Season with salt and pepper. Add a few tablespoons of vinaigrette and toss well. Add a light more, if needed.
