Polenta Stars
Makes 36-48 stars2 cups quick-cooking polenta
Vegetable oil for frying
8 oz. mild goat cheese, at room temperature
8 oz. cream cheese, at room temperature
2 cups tomato chutney (purchase tomato chutney or tomato bruschetta topping at your local market).
1. Cook the polenta according to the package directions. Spread onto the prepared baking sheet and let cool. Cut into small stars.
2. In a large, deep skillet, heat 1-2 in.es of oil to 250º. Fry polenta stars until they are light golden brown and crisp.
3. Put the goat cheese and cream cheese in a bowl and blend. Top each warm star with 1 tsp. cheese mixture and 1 tsp. of tomato chutney. Garnish with basil leaf.
